Tonight was all about protein! I made my favorite boneless chicken thigh kabob which I marinated in onion juice, lemon juice, olive oil, and seasoned with saffron, turmeric powder, salt, and black pepper. Also, chopped some veggies added some olive oil, salt, and pepper to them. I threaded the chicken and veggies onto some bamboo skewers and grilled them over a stove top grill. These bamboo skewers are a life saver - they make serving and cleanup so much easier than other types of skewers. The chicken kabob turned out so juicy, tender, and flavorful! You do need to make sure that the chicken is cut as flat as possible so that it cooks evenly. This dish is great with pita bread and some yogurt sauce or you can enjoy it with some white rice.
